The event

Today the value chain in food production is a unique communication chain in which the longstanding call for a transparent food market is finally to be satisfied. There are two fundamental requirements for this, namely (1) comprehensive, open, honest, easily understandable and uncoded information, and (2), that the origin, production and distribution of the foods, processes used during production and the sense and purpose of additives are made transparent and verifiable for interested consumers. Since according to HUMBOLDT´s finding it is not the facts that decide how we behave, but instead our opinion about these facts, the significance of communication in the food industry is often still underestimated right up to the present day. Instead weaknesses in communication have a long tradition here, whether- as often happens - only the legally prescribed information is provided, or consumer information is preferably left to self-appointed experts, or advertising suggest to consumers that traditional methods are used when in fact highly engineered and mechanised processes are involved.
The objective of this session is to explore various aspects of transparency in the food value chain and highlight their importance for the food market of the future.
