High Pressure Processing (HPP) is a non-thermal preservation technology used for a large variety of foods. This method applies pressure up to 600 MPa (87 000 psi) to inactivate spoilage and harmful microorganisms, ensuring food safety and extending shelf-life.
Consumer's demands for HPP beverages (cold-press juices, cold-brew coffee or tea, or milk replacers) is increasing because their unique attributes in terms of flavour, nutritional quality and freshness. This is the fastest-growing sector, representing 390 million litres worldwide (around 30 % of global HPP food production).
Until now industrial HPP machines have worked following an "in-pack" concept, processing already-packaged or bottled products only. Hiperbaric has launched a breakthrough innovation: Hiperbaric 1050 Bulk. This unique machine has been designed to process up to 10 000 L/h of beverages in bulk before bottling. Hiperbaric 1050 Bulk is the most productive and cost-effective HPP equipment in the World, developed in the frame of a European project "Horizon 2020 SME Instrument".
